Method 1: Dry Meat Preservation
- Preparation:
- Separate the amount of meat you want to preserve.
- Remove all the fat and cut the meat into thin, long pieces.
- Salting and Draining:
- Sprinkle salt over the meat pieces and place them in a strainer or net to allow the water to drain.
- Leave the meat for 10 to 15 minutes to drain the water completely.
- Drying:
- Find a well-ventilated place in your house with no direct sunlight.
- Tie a strong thread and spread the meat pieces on it, ensuring a small distance between each piece.
- Cover the meat with a muslin cloth to protect it from flies and insects.
- Storage:
- After 3 to 4 days, remove the meat and store it in a cloth bag.
- When ready to use, wash the meat and cook as desired. This dry meat can be used in barbecues, potato dishes, okra, or even made into pulao. Boil the meat in water before preparing it like fresh meat.

- Do not wash the meat before preservation, as the absorbed water can promote bacterial growth, causing spoilage.
